This sweet potatoes and beef meal I developed, while we followed the Autoimmune Diet (AIP). The AIP diet can become expensive and I always tried to create and cook compliant meals that were affordable and easy to make, while everyone in the family ate them. And I can say this dish is a winner. We still have it very often and is requested by the kids frequently. It involves a little bit of prepping, some peeling and cutting the potatoes. It can feel like a lot of prepping if you are making a large batch of it for a large family or for meal planning. However, it is so affordable and you only need 2 main ingredients (excluding oil and salt)- Sweet Potatoes and Ground Beef.

Ingredients and Directions for this Paleo Ground Beef and Sweet Potato Meal

 

Things  you need:

 

Sweet potatoes

Grass-Fed Grass -Finished Ground Beef

Olive Oil

Himalayan Salt

Iron skillet (optional, but cooks the best)

Directions

 

First wash and peel the sweet potatoes. Cut the potatoes in small cubes.

Add some olive oil to an iron skillet, enough to cover the bottom of the skillet. Add the sweet potatoes and salt. Add another 1-2 Tbsp. of olive oil over the potatoes. Cover the skillet with a lid and cook under medium/low heat for about 20 mins or until potatoes are soft and meat is cooked (if you cook the meat with the potatoes).

If you are using conventional ground beef, especially with a high fat content, you will want to cook the meat separated from the potatoes,  and drain the fat before adding it to the sweet potatoes. If you can not afford or can not get grass-fed ground beef, the best way  you can minimize the toxins you and your family will be exposed too, is to not consume the fat from the ground beef. Animals (and humans ) store their toxins in their fat, so by draining it, you can minimize the toxin load.

To do that, add the meat to a skillet, sprinkle with some salt, and cook under medium heat for about 15 mins or until meat is cooked and browned. Stir the meat often so it would not stick to the pan. Drain the fat and add the meat to the cooked sweet potatoes, and if you desire you can cook on low heat for extra 5 mins in order for the flavors to combine. However, I rarely do that and food still tastes delicious.

 

If the meat you use is grass-fed or 10% fat for the conventional one, you can cook the meat together with the sweet potatoes. Try to mix the potatoes and meat from time to time, while cooking. You need to keep the lid on after you stir them, in order to keep the steam in. The potatoes will cook faster and they would not get burned as much.

 

Troubleshooting :

 

If potatoes get burned a lot, (a little bit of browning is OK) you might need to cook them on lower heat.

If potatoes seem dry, you will need to add more oil, while cooking.

This Paleo Ground Beef and Sweet Potato Meal is a great healthy comfort meal. It tastes best while is fresh and warm, but it can still taste delicious , if it is prepared ahead of time. It is a great easy affordable breakfast, lunch, or dinner.
