These 3 ingredient oatmeal banana cookies, contain actually only 2 main ingredients – bananas and oats. You can make it just with the 2 main ingredients, however we like to add dried fruit or chocolate chips to them for extra flavor. They are probably the healthiest, with least ingredients cookies you have ever made. All my kids love them, toddler, preschool, or tween, and they think these cookies are amazing.  They are great for breakfast, afternoon snack, or even as dessert.  You can make it ahead of time, and have them for several days, if you can keep little hands from eating them all right off the pan.

Things you need for these  Delicious 3 Ingredient Vegan Banana Cookies:

Bananas

Organic Old-fashioned oats or Quick Rolled Oats

Dried fruit (like Dried Cherries, Mangoes, Papayas,Dates, or Cranberries)  or  Chocolate chips  – Optional

 

Directions for Healthy Banana Cookies

 

Step 1

Peel and cut the Bananas and add them to a blender. Blend until smooth.

Step 2

In a bowl add Oats and Bananas and mix until all oats are no longer dry. If after you mixed blended bananas there are still dry oats, add a little bit of water to the dough.  If using, add the dry fruit and incorporate in the cookies. I used papaya and dates this time.However, other times I used chocolate chips or figs.

Step 3

Line a baking sheet with parchment paper. Using your hands form cookies from the dough and add to the baking sheet.  It should make around 12 cookies.

Step 4

Bake at 350 F for 10 mins. Let them cool off for few minutes before serving.
