Paleo Ground Beef and Sweet Potato Meal

This Paleo Ground Beef and Sweet Potato Meal is a healthy and tasty meal, that is easy to make and is kid and adult friendly. It's very affordable and only requires two main ingredients - sweet potatoes and ground beef. It tastes amazing, and it's very nutritious. It's a great savory breakfast, lunch, or dinner idea.

Ingredients

Instructions

  1. First wash and peel the sweet potatoes.

  2. Cut the potatoes in small cubes.

  3. Add some olive oil to an iron skillet, enough to cover the bottom of the skillet.

  4. Add the sweet potatoes and salt.

  5. Add another 1-2 Tbsp. of olive oil over the potatoes.

  6. Cover the skillet with a lid and cook under medium/low heat for about 20 mins or until potatoes are soft and meat is cooked (if you cook the meat with the potatoes).

Cooking meat and sweet potatoes separated

  1. If you are using conventional ground beef, especially with a high fat content, you will want to cook the meat separate and drain the fat before adding it to the sweet potatoes.

  2. Add the meat to a skillet, sprinkle with some salt, and cook under medium heat for about 15 mins or until meat is cooked and browned.

  3. Stir the meat often so it would not stick to the pan.

  4. Drain the fat and add the meat to the cooked sweet potatoes, and if you desire you can cook on low heat for extra 5 mins in order for the flavors to combine.

Cooking Meat and Sweet Potatoes together

  1. If the meat you use is grass-fed or 10% fat for the conventional one, you can cook the meat together with the sweet potatoes.

  2. Cook on low - medium heat, while stirring meat and potatoes from time to time. If they appear too dry, try adding more olive oil.

Recipe Notes

Troubleshooting:

If potatoes get burned a lot, (a little bit of browning is OK) you might need to cook them on lower heat.

If potatoes seem dry, you will need to add more oil, while cooking.
