Thai Pineapple Fried Rice

This Thai Pineapple Fried Rice is delicious, low cost, and very nutritious. The pineapple fried rice is vegan, nut-free, and soy-free. It's great allergy friendly meal, being also gluten-free, dairy-free, and egg-free. It's super easy to make and feeds the whole family in 30 mins.

  1. Cook the rice in a saucepan according to the directions on the package.

  2. Meanwhile, cut the mushrooms, peppers, onions, garlic, and pineapple in small pieces/chunks.

  3. In an iron skillet add olive oil and the vegetables and pineapple and saute them over medium heat, until they are soft.

  4. Stir occasionally.

  5. If liquid forms from mushrooms and pineapples, don’t worry. The rice will soak up the water later.

  6. Add the cooked rice to the skillet, and continue to cook at medium heat.

  7. Stir often.

  8. If liquid forms from the vegetables and pineapple, let the rice soak up that first while cooking it together. 

  9. After all liquid has been soaked, add 1-2 tablespoon of olive oil and 1-2 tablespoon of sesame oil. 

  10.  If someone has allergy to sesame oil, you can replace it with extra olive oil. 

  11. t’s important to keep stirring while cooking at this time, since it is very easy for the food to stick

  12. Cook another 5-10 mins.
