Almond Orange Cake

This Almond Orange Cake is delicious, moist, gluten-free, flourless, grain-free, and Paleo. It's the easiest allergy-friendly cake to make. It's dairy-free and healthy, perfect for a gluten-free Christmas cake, birthday or Mother's Day cake.

Ingredients

  • 3 cups Almond Flour
  • 4 Organic Free-range Eggs
  • 3-4 Organic Oranges
  • 1/2 tsp Baking Soda
  • 1 tsp Cinnamon Optional
  • 1/2 tsp Vanilla Optional
  • 1/2 cup Turbinado sugar + 2 extra Tbsp. for the glaze

Instructions

  1. Preheat oven at 325 F degrees.

  2. Peel 2 oranges, separate the individual pieces and add them to a pot with a little bit of water. 

  3. Cover the pot with a lid and simmer the oranges and water for about 15-30 mins, until oranges soften.

  4. Meanwhile, in a bowl add the eggs and sugar, and with an electric mixer,  mix the eggs and sugar until the mixture looks fluffy and double in size.

  5. Add the almond flour, cinnamon, and baking soda and mix them in until all incorporated. The dough can get sticky, so you might need to use the electric mixer to have all the flour well incorporated, or you can wait to add the flour after you add the oranges.

  6. After the oranges are cooked, drain the water and add the oranges to a blender, and blend until smooth.

  7. Add the orange mixture and vanilla (if using) to the dough and mix well until all is incorporated.

  8. Grease a 8 inch or 9 inch Springform cake pan and add the dough to it.

  9. Bake at 325 F for about 40-50 mins until a toothpick comes out clean.

  10. While the cake is baking, you can prepare the oranges for decorating the cake.Cut 1 orange in thin circles. Remove the peel from each circle. Add them to the top of the cake.



Make Orange Sugar Glaze

  1. In a saucepan, add two tablespoons of Turbinado sugar, 2 tablespoons of orange juice, and 1/4 cup of water.

  2. Add the pan to the stove and cook under low heat until sugar is melted.

  3. With a tablespoon spread the orange sugar glaze over the cake.

Recipe Notes

Serve the cake warm or serve after it chill in the fridge for a couple of hours.
